Ballykeefe Distillery is situated in the heartland of Ireland, adjacent to its medieval capital, Kilkenny city.
Ballykeefe is the first Whiskey distillery to operate in Kilkenny in over 200 years. Kilkenny, is according to the Red Book of Ossory the birthplace of Whiskey with the writings dating back to 1324. Thus making Kilkenny a perfect spot for a family who have been farming there even longer.
Morgan and Anne Ging looked to the history of whiskey, farming and Kilkenny and decided to revive the traditional Irish custom of the family farm distillery. An Eco-friendly, 100% sustainable family farm distillery. Morgan can actually trace his lineage back to when records began; all the way to the golden era of family farm distilleries. “At Ballykeefe we are now bringing a truly special “water of life” from centuries past to a new generation for their pleasure and good health.”
Field to Glass
They were established in June of 2015, to complement and diversify operations on the farm, which began as a beef and tillage operation. Their ‘water of life’ (Uisce Bheatha) is genuinely field to glass, they grow the barley to produce their whiskey; with the nutritious by-product, aka the spent grain and pot ale being used as feed for the cattle. This one aspect alone is one of a kind in Ireland, no off farm waste and keeping their foot-print as green as possible.
It is somewhat a unique set-up in the beautiful pastures of county Kilkenny, fifteen minutes from the wandering medieval streets of Kilkenny city. Their aim is to bring traditions back but for their family as well as to the community. A visit is highly recommended to the tranquil yet buzzing Ballykeefe Distillery.
