Pearse Lyons Distillery in St. James Church on St. James Street
Pearse Lyons distillery may be considered one of the more iconic distilleries in Dublin. It is housed in a deconserated church, on Thomas street on the fringe of Dublin city, a stones throw from the Guinness Storehouse. This distillery was a dream for Pearse Lyons, one that has come into fruition in his lifetime. Pearse Lyons grandparents are buried in the surrounding graveyard, sadly though in unmarked graves. The family of Pearse did not have the money back then to purchase them. Quite a turn in fortune, Pearse although born here in Ireland made his money Kentucky with AllTech, an animal nutrition group.
St. James Church
St.James’s church lay silent for many years before Pearse bought it and went about the meticulous restoration of this iconic building. Today it is a shinning beacon on James’s street; welcoming all who are interested or have a love for whiskey. Pearse, a man who never rested on his laurels, set up a temporary home for the distillery in county Carlow; until the church renovations where completed.
When it was time to move the stills, the only option they had to put them insitue was by taking the roof off. They then slowly lifted them down into position. Once the location of the church alter, now the home to the unique vendome stills, which were made in Louisville, Kentucky.
Pearse Lyons distillery is a thing of beauty with grace and much sympathy has been given to these once sacred walls. At night you will see the blue glow of the newly designed spire by Pearses’ wife, Deirdre. “Visitors can also touch, taste and smell every step of the distilling process”.
