The Dingle Whiskey Distillery was the brainchild of three men, Oliver Hughes; Liam LaHart and Peter Mosley. Back in 1996 their first journey together was setting up their very own craft beer pub and brewery; The Porterhouse. Today it is a great success with bars in Dublin, London and New York but could they do the same with a whiskey distillery? The simple answer is yes, an overwhelming yes.
An Artisan Distillery
In a simple tin shed in the small village of Dingle in county Kerry overlooking the bay, their vision was realised. Their scale is modest, essentially making them an artisan distillery. The Dingle distillery is the first distillery of the twenty first century and were somewhat seen as rekindling the tradition of independent distilling in Ireland.
And The Whiskey Was Born
In December 2012 their stills were singing with this elusive nectar. By December 19th 2015 it was bottled and was welcomed with open arms. Due to the scale of this distillery they could not make juice quick enough to meet demand. Today, they are still working hard to catch up with their unprecedented popularity. The Dingle Distillery also managed to fit in a a small, swan neck pot still. This still was designed to create their unique and equally popular Dingle Original Gin and Dingle Distillery Vodka.

A visit here is a must, it may look humble but its location mixed with the hidden beauty within those tin walls is space where dreams have come true. Inside the Dingle distillery lie the beautiful copper stills. These stills were specifically designed to incorporate a boil ball, which encourages reflux giving their elixir a purity and silky smoothness. Thus making the future for Dingle whiskey golden.
